Summer Corn and Avocado Salad with Cilantro Buttermilk Dressing

There’s nothing like sweet, crunchy corn cut right off the cob—and tossing it with avocado and a creamy buttermilk dressing takes the deliciousness to an even higher elevation. To stretch this salad a little further, add in a few cups of arugula leaves.

For the dressing

1 small shallot, peeled and cut in half

¼ cup buttermilk

¼ cup mayonnaise

2 tablespoons extra-virgin olive oil

¼ cup fresh cilantro leaves

1 tablespoon white wine vinegar

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper
